3 Ingredient Paleo Nut Butter Cups

Craving something chocolaty, salty, and/or nut-buttery? Looking for an easy snack, without the added gunk in most pre-packaged foods these days? Try these paleo nut butter cups, featuring only three ingredients: cocoa powder, coconut oil, and nut butter. No fluff, just the real, simple stuff.

I started making these paleo nut butter cups shorty after my autoimmune diagnosis in my mid-20’s. In order to better manage my symptoms and stabilize my mood, I gave up gluten, most processed foods, and added sugars, and incorporated more healthy fats and animal proteins into my diet. These changes, along with some other lifestyle adjustments, helped me regain stability more than any other pharmaceutical intervention I’d ever tried.

The benefits of healthy fats

Fats in general get a bad rep. Since the “low-fat diet” craze saturated our culture throughout the 1980’s, people have grown a little more antsy around foods with a higher fat ratio. Turns out, fat doesn’t actually make you fat. Traditional forms of fat (olive oil, coconut oil, seeds, animal fats) are very good for the brain and body, and there is evidence that a “low fat” diet can actually be quite bad for you. Low-fat diets are now considered to be detrimental to our mental health, and can contribute to depression, anger, and irritability, among other mental health problems.

The primary ingredient in this recipe is coconut oil, which provides healthy fatty acids and helps to raise good cholesterol levels in the body. Healthy levels of good cholesterol = happier mental health. In order to get the most benefits from coconut oil, choose the organic, virgin oil rather than the refined versions.

I regularly to add in these paleo nut butter cups for a simple, readily available source of fat and protein. Try eating them by themselves, dunk them into your morning coffee (or alternative morning beverage), or let one get all gooey over a hot sweet potato 🙂

Keep in mind, these paleo nut butter cups are not your traditional Reese’s Peanut Butter cups. They don’t have the same texture or sweetness. This recipe is not meant to re-create the Reese’s, but to offer you a wholesome treat to help nourish and fuel your body — without the added headaches and/or sugar-highs.

Paleo Nut Butter Cups

Featuring three simple ingredients: cocoa powder, coconut oil, and nut butter!

Prep Time 2 mins

Cook Time 3 mins

Cooling time 20 mins

Total Time 25 mins

Servings 4 servings

Calories 210 kcal

  • muffin tin

  • muffin liners

  • small cooking pot

  • stove or microwave

  • 4 tbsp coconut oil
  • 3 tbsp cocoa powder
  • 4 tbsp nut butter


  • 1/8 tsp salt
  • 1 tsp coconut sugar
  • Locate a typical muffin or cupcake tin and line with 4 cupcake liners

  • Heat all ingredients except nut butter in pot on low heat (melt in microwave if no stove handy)

  • Stir until the cocoa powder is fully dissolved

  • Equally distribute the coconut oil goodness into the four cupcake tins

  • Scoop a spoonful of nut butter into the center of each cup

  • Transfer butter cups to the fridge and allow to harden for about 20 minutes

  • Pop them out, and enjoy!
