Keto Cinnamon Rolls Made With Coconut Flour

I’ve been trying to make coconut flour cinnamon rolls forever! Coconut flour alone isn’t enough to create a moldable dough that can be used like other flours. Instead, I turned to using coconut flour fat head dough.

I love fathead dough and I used it to create these Keto Cinnamon Rolls. I use my coconut flour fathead dough recipe except, for this recipe I increased the amount of coconut flour to help the cinnamon rolls hold their shape better. 

Fathead dough is so much fun to use. It feels like a real dough and you can fold it and roll it just like regular dough. 

This recipe for keto cinnamon rolls uses only mozzarella cheese, cream cheese, coconut flour, eggs, and some sweetener. The cinnamon rolls end up being on the small side because the dough doesn’t rise.

I included a simple cream cheese frosting recipe that is quick to whip together. You can use your favorite cream cheese frosting recipe instead or a glaze. 

How To Make Keto Cinnamon Rolls

To make the cinnamon rolls you simply melt the cheese and cream cheese together. 

Mix the flour mixture together. Then combine the two into a dough.

Roll the dough into a rectangle and add the filling. Then roll it into a cyclinder and cut into pieces. 

Bake until golden brown and spread with the frosting.

How can I make this recipe dairy-free?

You cannot make this recipe dairy-free. This recipe is made with fathead dough and fathead dough is made from mozzarella cheese and cream cheese. If you’re looking for a dairy-free cinnamon roll option, try my cinnabon muffins. They have all the flavors of cinnamon rolls, but in a muffin!

Should the fathead dough be sticky?

For this keto cinnamon rolls, the fathead dough is only slightly sticky. I greased the area I was spreading the dough on to avoid sticking. You can grease your hands to help the dough not stick to your fingers.

  • 3 cups shredded mozzarella cheese
  • ¼ cup + 2 tbsp cream cheese
  • 2 large eggs
  • ¾ cup coconut flour
  • ½ cup powdered erythritol blend (I used Lakanto)
  • 2 tsp baking powder
  • ½ tsp vanilla extract
  • ¼ tsp salt


Cream Cheese Frosting:

  • 4 oz cream cheese (half of the package)
  • ¼ cup powdered erythritol blend (I used Lakanto)
  • ½ tsp vanilla extract

Coconut oil for greasing


  1. Preheat oven to 350° F. Line a 9×9 baking pan with parchment paper.

  2. Place the cheese and cream cheese into a microwave-safe bowl. Set aside.

  3. In a large mixing bowl, add eggs, coconut flour, sweetener, baking powder, vanilla, and salt. Whisk together.

  4. Melt the cheese and cream cheese in the microwave for 1 minute and 30 seconds or until fully melted. Stir together.

  5. Add the melted cheese mixture to the flour mixture and using a spatula and your hands, mix together until fully combined. You no longer see pieces of the flour mixture, everything is fully mixed together.

  6. Grease a surface with coconut oil or your preferred oil. Place the ball of dough on the surface. Using your hands (dip in coconut oil) or a greased rolling pin, spread the dough into a rectangle shape that is 9×16 inches.

  7. Take the filling and either mix it all together in a bowl and spread it over the dough or sprinkle the golden erythritol and cinnamon over the dough, leaving some space around the edges, then place dabs of butter all over and spread it together.

  8. Roll the dough tightly, rolling from the longest edge to the other longest edge.

  9. Take a measuring tape or a ruler and measure 1 inch for each roll. Cut into 1 inch rolls.

  10. Place the rolls into a 9×9 baking pan with parchment paper. You can use a 8×8 bakng pan. Bake for 18 to 23 minutes or until golden brown and a toothpick can be inserted and comes out clean.

  11. While the cinnamon rolls are baking, make the cream cheese frosting. Place all of the cream cheese frosting ingredients into a small bowl and whisk together. Spread over warm cinnamon rolls. Serve the cinnamon rolls warm.
