GUYS. These things are so fun! If any of you remember and enjoyed my initial recipe “No-Bake Lemon Coconut Balls” that went viral..then you will LOVE these even more! These are like the next-level version. They are simpler to make and come out more like a chewy candy with a smoother and richer texture. I am obsessed. Lol
I will say they are a little messy to make because the coconut oil will get on your hands as you roll them but if you are willing to get a little down and dirty then I guarantee it will be worth it.
Lemon Coconut Oil Chews

-2 1/2 tbsp (37g) coconut oil, melted
-1/4 cup + 1 1/2 tbsp cream cheese, softened (room temp) (80g)
-2 tbsp + 1 tsp room temperature pasteurized egg white (donʼt leave out!)
-1 1/2 tbsp lemon juice (you can add a bit of zest as well if you’d like a stronger flavour)
-Optional: 1/4 tsp lemon extract for a more traditional candy flavour
-3 tbsp + 2 tsp (~22g) coconut flour
-2 tbsp + 1 tsp splenda (or another sweetener that measures like sugar)
-1/8 tsp xanthan gum (preferably just under 1/8th tsp -this is necessary to create gummy-like texture!)
-2-3 tbsp truvia or another granulated sweetener for rolling
In a small bowl, combine all of your ingredients. (It’s best to make sure the coconut oil is just a little warm and the rest of your ingredients are at room temperature).
Use a fork to whisk everything together. It will take a bit to come together so stir well!
Once a gummy-like mixture starts to form, you can begin to roll it into small balls. (Don’t worry if coconut oil seeps out, this is fine and some will regardless).
Place each ball on a piece of paper towel and roll around to soak up a little of the extra coconut oil.
Next roll the balls in granulated sweetener and place on a plate lined with parchment.
Freeze for 5-10min before consuming.
Store in the freezer and remove 5-10 minutes before serving. Enjoy!
