You can make coconut flour sugar cookies in a conventional circle shape, or you can cut them into all sorts of adorable shapes depending on the holiday. Kids and adults alike will love making and decorating these coconut oil sugar cookies!

The holidays are obviously a big time for homemade paleo coconut sugar cookies, but I also like to make them all year long!  Baking gluten-free and paleo goodies isn’t always easy, but I think these are some of the best gluten-free sugar cookies I have tried!

And, gluten-free sugar cookies are versatile for all occasions. Whether it’s school parties, dinners, or backyard barbecues, it’s way more fun when you serve a plate of freshly baked easy paleo sugar cookies.

How To Make Coconut Sugar Cookies From Scratch

You won’t find any overly processed ingredients in this grain-free cookie recipe… just 7 easy, real food ingredients!

Here’s how to make paleo cookies with coconut flour:

  • Beat coconut oil and coconut sugar. Using a hand mixer, beat together the oil and sugar. This is similar to creaming butter, but we’re using coconut oil instead.
  • Beat in eggs, vanilla, sea salt, and baking powder. Continue beating until uniform.
  • Slowly add in the coconut flour. Using the hand mixer, gradually beat in the coconut flour a little at a time.

TIP: The cookie dough will thicken as it sits for a few minutes. It will be crumbly, which is normal.

  • Add gelatin to cookie dough. Slowly sprinkle in the gelatin on top of the cookie dough. Mix thoroughly and allow the dough to rest to thicken more.

How To Make Round Paleo Sugar Cookies

  • Using a cookie scoop, add dough to the cookie sheet…

  • …And slightly flatten with your fingers, or the palm of your hand.

How To Make Coconut Sugar Cookies In Fun Shapes

  • Refrigerate the dough in a ball for at least an hour.
  • Roll out the dough between parchment paper, then cut shapes and place them on the cookie sheet. Repeat until you have used all the dough.

How Do I Keep Cookie Dough From Sticking To Cookie Cutter?

The easiest way to keep your easy paleo cookies from sticking to the cookie cutter is by dipping the cookie cutter in coconut flour first! Just lightly dip it in the flour and cut. Repeat until all the cookies have been cut.

How Long To Bake Coconut Flour Cookies

Whether you are making round cookies or shapes, all that’s left is baking! Coconut flour cookies bake super quickly – just 7-8 minutes for small cookies, or maybe up to 10 minutes if you make larger ones.

TIP: Wait for the cookies to cool completely before frosting or stacking them, to avoid breaking them!

How Do You Keep Gluten-Free Cookies From Spreading?

This gluten-free sugar cutout cookies recipe thankfully doesn’t spread much during baking.

Still, make sure to allow at a minimum of 1-inch to be between the gluten-free sugar cookies, so if they do spread a little bit, there is some room.

Why Did My Coconut Flour Sugar Cookies Get Hard?

There are a couple of reasons these coconut oil sugar cookies could get hard. Here’s how to prevent it:

  • Don’t overbake. Your coconut flour sugar cookies should still be soft when you remove them from the oven. If they are super firm when you take them out, they’ll be totally dry after cooling.
  • Don’t flatten too much. When you roll out or flatten the cookies, be sure they are at least 1/4 inch thick. If the paleo sugar cookies are too thin, they are more likely to dry out.
  • Don’t add more flour. Coconut flour cookie dough thickens as it sits, so it may seem too runny at first. Don’t add more flour, or they’ll be dry! If they seem too runny or are hard to shape even after waiting a little while, try chilling the dough before making cookies with it.

How Do You Store Coconut Flour Sugar Cookies?

Store coconut flour sugar cookies will last 3-4 days in an airtight container on the counter.

You can also refrigerate the coconut oil sugar cookies if you want to – you might get a couple extra days out of them that way.

Can You Freeze Coconut Oil Sugar Cookies?

Yes, you can freeze these coconut oil sugar cookies. Do a flash freeze for 2-3 hours in a single layer, then transfer them to a freezer container or bag.

Cookies out-of-the freezer are ready when you need them! 😉
