Stuffed Beef Roll Up

Ingredients:

1lb thinly sliced beef or veal

Coconut oil

Marinade:

¼ cup of worcheshire

1 tsp Himalayan Salt

½ tsp coarse black pepper

½ tsp chili powder

1 tsp of garlic powder

1 tsp onion powder

½ tsp seasoned salt

1 tsp ground thyme

Vegetables inside roll up:

1 bunch asparagus

1 red bell pepper sliced

1 yellow bell pepper sliced

Miscellaneous ingredients:

Medium sized skewers

Directions:

  1. In a mixing bowl, combine the meat and all of the marinade ingredients.
  2. Mix ingredients and allow meat to marinate for 2 hours or overnight.
  3. After meat is marinated, pre-heat oven to 400 degrees Fahrenheit.
  4. Lay meat on a flat surface and then place vegetables in a pile on one end of the meat.
  5. Begin to roll meat over vegetables, creating a roll with meat on the outside and vegetables on the inside. Skewer the roll ups, in effort to prevent the roll from unforming.
  6. Heat a medium sized sauté pan over medium to high heat.
  7. Once the pan is hot, add coconut oil.
  8. When the oil starts to look like water in your pan, add the meat roll up.
  9. Pan sear roll up for 3-4 minutes on each side, the objective is to get a nice color on the roll up.
  10. Place roll up on a roasting pan and cook in oven for 10 – 15 minutes.
  11. Upon finishing the cooking process, allow roll up to rest for 5 minutes.
  12. Slice and serve over a bed of rice, or if you are keto, place roll up over salad mix of your choice.
