This recipe for keto brownies is easy to whip together any time you crave chocolate and want to stay on track with your low carb diet.
You only need one bowl to make these cake-like low carb brownies. Made with almond flour, these decadent brownies are gluten-free as well as dairy-free.
How To Make Keto Brownies
This sweet keto-friendly dessert is made with the following ingredients:
- unsweetened cocoa
- baking soda
- coconut oil
- boiling water
- Truvia Sweet Complete
- almond flour
To make them, first, you need to preheat your oven to 350 degrees (Fahrenheit) and spray an 8×8 baking dish with non-stick spray.
Next, melt coconut oil. Place 2/3 cup coconut in a small, microwave-safe bowl, cover it, and microwave on HIGH for 30 seconds. Allow the coconut oil to cool before using it. (Although you could use fractionated coconut oil in this recipe, I don’t recommend it.)
In a large mixing bowl, whisk together unsweetened cocoa and baking soda. Add half of the cooled coconut oil and 1/2 cup boiling water. Mix until it is all well blended.
Now it is time to add the remaining coconut oil, Truvia (stevia), eggs, and vanilla.
Fold in the almond flour and salt into the chocolate mixture and make sure the almond flour has been incorporated into the batter.
The last step is to pour the keto brownie batter into the prepared pan and bake for 25 to 30 minutes. It’s perfectly fine to check them at 20 minutes to get a gauge on how they are doing.
Because all ovens are different, if the brownies are not done at the 30-minute mark and the edges are starting to brown, take the pan out of the oven, carefully cover with aluminum foil, and continue baking.
Check every 5 minutes for doneness. You check by inserting a toothpick into the middle of the brownies. If it comes out clean, the brownies are done. If the toothpick comes out with brownie batter on it, continue baking them.
- ¾ cup unsweetened cocoa

- ⅔ cup melted coconut oil, cooled

- 1 cup Truvia Sweet Complete
- 2 eggs
- 1 teaspoon vanilla
- 1 ⅓ cups almond flour
- ¼ teaspoon salt

- Melt coconut oil in the microwave on HIGH for 30 seconds and allow it to cool.
- Whisk cocoa and baking soda together in a mixing bowl.
- Add half of the coconut oil and all of the boiling water to the cocoa and baking soda mixture. Mix until well blended.
- Add remaining oil, Truvia (stevia), eggs, and vanilla.
- Fold almond flour and salt.
- Pour brownie batter into prepared pans.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
If the brownies are browning at the edges but still are raw in the center, cover with aluminum foil and continue to bake. Check every 5 minutes for doneness.

Keto Brownies Information
While technically sugar-free, these brownies are sweetened with Truvia Sweet Complete.
What is Truvia Sweet Complete? It’s a new sweetener from Truvia and they consider it “the once-and-for-all all-purpose sweetener.” It’s a natural sweetener with zero calories per serving and that can be used like sugar, wherever you use sugar.
The ingredients in Truvia Sweet Complete are erythritol, chicory root fiber, and stevia leaf. Each 2 teaspoon serving has 2 grams of dietary fiber, 7 grams of total carbohydrates, and 5 grams of erythritol.
According to the Truvia website, there are zero calories. I am not sure how that works out, considering that carbohydrates have 4 calories for each 1 gram of carbs. But since I am not a scientist, let’s just go with what the site says, okay?
Compared to Betty Crocker Fudge Brownie Mix, the keto brownies have 25.44 grams of carbs (not net) per brownie (1/9 of the pan). I know that the nutrition calculator says they have 33, but when you add up the carbs of the ingredients and then divide, it comes out to 25.44. [Unsweetened cocoa 35.02, Truvia Sweet Complete 168, eggs 1.2, and almond flour 24.76]
Assuming that the fiber calculation is correct, then each keto brownie would have 22.44 grams of carbs. (With Truvia Sweet Complete having 2 grams of fiber per serving, there would be 48 grams of fiber in the whole recipe thanks to Truvia. That would be 5.33 grams of fiber per brownie, not including the fiber from almonds.)
Betty Crocker’s Fudge Brownies have 22 grams of carbs. While that seems that they are about the same, the serving size for a Betty Crocker brownie is 1/20th of the pan. And those numbers might be only for the mix. Have you ever eaten 1/20th of a pan of brownies? Me, neither.
One nice thing about these keto brownies being baked in a square pan is that it makes it easier to cut them into nine servings. It’s like drawing a hashtag (#) across the pan and cutting.
These brownies should keep at room temperature for several days. For storing longer, cut the brownies into individual slices, wrap tightly in plastic wrap, and place in a zip-top freezer bag. They should safely store for a few months in the freezer.
